Thinly slice the apple (unpeeled) into half-moons. Pick and thinly slice the mint leaves. Roughly chop the walnuts.
Heat a medium frying pan over a medium-high heat. Add the walnuts and toast, tossing, until golden, 3-4 minutes.
In a large bowl, combine the apple, mint, slaw mix and mustard cider dressing. Season to taste.
Transfer the apple and mint slaw to a serving bowl. Top with the toasted walnuts.
