Thinly slice the apple. Pick and thinly slice the mint leaves. Roughly chop the walnuts.

Heat a medium frying pan over a medium-high heat. Add the walnuts and toast, tossing until golden, 3-4 minutes.

In a large bowl, add the apple, mint, slaw mix and mustard cider dressing. Toss to combine. Season with salt and pepper to taste.

Divide apple and carrot slaw between plates. Top with the toasted walnuts.
