You can never stop at only one fritter, they should always come in pairs or threes or fours! Hidden bits of bacon and buried in a cheesy veggie mixture, cooked to golden perfection. Dip them in the drizzled Hollandaise for an extra bite of flavour, then dig in, we know you’ll be coming back for more.

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook diced bacon, breaking up with a spoon, until golden, 4-5 minutes. • Meanwhile, grate carrot. Squeeze out any excess moisture from carrot using paper towel or clean cloth. Drain the sweetcorn. • In a medium bowl, combine bacon, sweetcorn, carrot, grated Parmesan cheese, garlic & herb seasoning, the egg and the plain flour. Add the salt and a pinch of pepper, then mix well to combine.

TIP: Lift out some of the fritter mixture with a spoon. If it's too wet and doesn't hold its shape, add a little more flour!


• Heat a large frying pan over medium-high heat with enough olive oil to coat the base. • When oil is hot, add heaped tablespoons of fritter mixture in batches and flatten with a spatula. • Cook fritters until golden, 3-4 minutes each side (don't flip too early!). • Transfer to a paper towel-lined plate. You should get 3-4 fritters per person. TIP: Add extra olive oil between batches as needed.


• Roughly chop tomato. Thinly slice radish. • In a second medium bowl, combine a drizzle of white wine vinegar and olive oil. • Season, then add salad leaves, tomato and radish. Toss to combine.


• Divide bacon and Parmesan fritters between plates. • Serve with radish salad and Hollandaise. Enjoy!
