All-American Spice Blend
shredded red cabbage
mini flour tortillas(ContainsGluten)
shredded Cheddar cheese(ContainsMilk)
BBQ mayonnaise(ContainsEggsMay be presentMilk)
Drain corn. Heat olive oil in frying pan over high heat. Cook beef strips, spice blend and corn, tossing, until browned, 1-2 mins.
Meanwhile, roughly chop tomato and cucumber. Slice lemon into wedges. In a bowl, add BBQ mayo, cabbage and a generous squeeze of lemon juice. Season and toss.
Now, zap tortillas in microwave for 10 second bursts, until warmed through. Roughly chop coriander. Fill tortillas with beef, Cheddar, tomato, cucumber and slaw. Top with sour cream and coriander. Serve with extra lemon wedges.
