• Thinly slice radish. Pick and thinly slice mint leaves. Slice cucumber into half-moons. Roughly shred cos lettuce. Finely chop garlic. Slice lemon into wedges.
• In a large bowl, combine lamb mince, fine breadcrumbs, Middle Eastern seasoning, half the garlic and the egg.
• Using damp hands, roll lamb mixture into koftas about 8cm long and 2.5cm thick (3 per person).
• In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook remaining garlic until fragrant,
1 minute.
• Transfer garlic oil to a small bowl, then add sour cream and stir to combine. Season to taste and set aside.
• Return frying pan to a medium-high heat with a drizzle of olive oil.
• Cook koftas, turning regularly, until browned and cooked through, 10-12 minutes (cook in batches if your pan is getting crowded).
• Meanwhile, in a large bowl, combine radish, cucumber, cos lettuce, a generous squeeze of lemon and a drizzle of olive oil. Season to taste.
• Divide cos salad between bowls.
• Top with Middle Eastern lamb koftas.
• Drizzle over garlicky sour cream and garnish with mint. Serve with any remaining lemon wedges. Enjoy!
