Nothing can beat a burger or the flavour of chilli and lime jackfruit, so this epic combination is bound to hit the spot. We’re topping it off with a layer of our plant-based mayo, fresh fries and crunchy slaw on the side, it really can’t be any better than that!

• Preheat oven to 240°C/220°C fan-forced. Cut potato into fries. Place on a lined oven tray. • Drizzle with olive oil, season with salt and pepper and toss to coat. Spread out evenly, then bake until tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide between two trays.

• While the fries are baking, finely chop garlic. Grate carrot.

• When the fries have 10 minutes cook time remaining, heat a large frying pan over medium-high heat. Heat the plant-based butter and a drizzle of olive oil. • Cook 1/2 the carrot until tender, 3-4 minutes. Add garlic and sweet soy seasoning and cook until fragrant, 1 minute. • Add chilli & lime jackfruit and the salt, stirring, until heated through, 2-3 minutes. • Meanwhile, slice plant-based burger buns in half and bake directly on a wire oven rack until heated through, 2-3 minutes.

• In a large bowl, combine shredded cabbage mix, remaining carrot, a pinch of salt and a drizzle of olive oil and white wine vinegar. • Spread each bun with plant-based mayo, then top with chilli and lime jackfruit and slaw. • Serve with fries and any remaining slaw.
