• Heat frying pan over medium-high heat with enough olive oil to coat base of pan. Cook chicken until golden, 3-4 mins each side. Season • Meanwhile, halve ciabatta and toast or grill to your liking.

• Slice avocado in half, scoop flesh out and slice • Slice tomato and cucumber • In a bowl, combine sriracha and aioli.

• In a second bowl, combine lettuce mix, cucumber, balsamic dressing and pepitas. Season • Spread ciabatta with sriracha aioli, top with chicken, tomato and avocado. Serve with salad.
