• Boil the kettle. Half-fill a medium saucepan with boiling water. • Add basmati rice and a pinch of salt and cook, uncovered, over a high heat until tender, 12 minutes. • Drain rice and set aside.


• Meanwhile, drain and rinse black beans (see ingredients). Drain sweetcorn (see ingredients).


• In a large frying pan, heat a drizzle of olive oil over a high heat. Cook soffritto mix until softened, 3-4 minutes. • Add beef mince and cook, breaking up with a spoon, until just browned, 3-4 minutes. • Reduce heat to medium, then add tomato paste, Louisiana spice blend, garlic paste, butter, black beans and sweetcorn and cook until fragrant, 1 minute. • Add the water and cook until thickened, 1-2 minutes. • Remove from heat, then stir through baby spinach leaves until wilted. Season to taste.


• Divide rapid rice between bowls. • Top with American beef chilli and shredded Cheddar cheese. • Serve with corn chips.
