• Preheat oven to 240°C/220°C fan-forced. Cut potato into fries. • Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. • Spread out evenly, then bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide between two trays.
• Meanwhile, thinly slice spring onion. Grate carrot.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat. • Add diced bacon and cook, breaking up with a spoon, until golden, 6-7 minutes. Transfer to a small bowl.
• Return frying pan to high heat. Cook beef mince (no need for oil!), breaking up with a spoon, until just browned, 3-4 minutes. • Add All-American spice blend and cook, until fragrant, 1 minute. • Remove pan from heat, then add baby leaves, BBQ sauce and a splash of water. Stir until wilted. • Add shredded Cheddar cheese to the pan and cover with a lid (or foil) so it melts.
• Meanwhile, in a large bowl, combine shredded cabbage mix, carrot, mayonnaise and a drizzle of white wine vinegar. Season to taste.
• Divide potato fries between plates. • Top with cheesy beef and sprinkle over bacon. • Garnish with spring onion. Serve with creamy slaw. Enjoy!
