
Hocus Pocus Apple & Cream Cheese Galette
with Oozy Caramel & Almonds | Serves 2
Magic is in the air and we're going to use it create a galette like no other. Sweet apple is sliced up and cooked in layers of golden filo with cream cheese. Add a sprinkling of almonds, a drizzle of caramel and with the magic words, you have one delicious galette right before your eyes!

Instructions

• Preheat oven to 220ºC/200ºC fan-forced. • Thinly slice apple. • In a medium bowl, combine apple, the brown sugar and cinnamon. Toss to coat.

• In a small heatproof bowl, add the butter and microwave in 10 second bursts until melted. • Brush each sheet of filo pastry with melted butter. Place filo sheets flat on a lined oven tray, layering one on top of another. • Spread over cream cheese and top with apple slices, leaving a 4cm border around the edges.

• Carefully fold pastry edges over apple, leaving the centre exposed. Brush edges of pastry with remaining butter. • Bake galette on the lowest oven rack until the pastry is golden, 20-25 minutes. • In the last 5 minutes of baking, sprinkle over flaked almonds.
TIP: Baking the galette at the bottom of the oven prevents the pastry from getting soggy.

• Drizzle caramel sauce (see ingredients) over galette as desired. • Slice the galette. • Transfer hocus pocus apple and caramel galette to a serving plate. Enjoy!
