buttermilk pancake & waffle mix

In a medium bowl, combine buttermilk pancake & waffle mix and the warm water. Slice lemon into wedges. Roughly chop roasted almonds.
In a large frying pan, heat a drizzle of olive oil over a medium-high heat. When the oil is hot, add 1/3 cups of pancake batter in batches, and cook until golden, 3-5 minutes each side.
Divide the pancakes between plates. Squeeze over some lemon juice. Top with the passionfruit lemon sauce and almonds. Serve with any remaining lemon wedges.
FRESH TIP: Add a sprinkle of sugar for extra sweetness.
