• Note: This recipe is designed to be cooked with your child under adult supervision. • Boil the kettle. Half-fill a large saucepan with boiling water and a generous pinch of salt. • Cook spaghetti in boiling water until ‘al dente’, 10 minutes. • Reserve some pasta water (1/4 cup for 2 people / 1/2 cup for 4 people). Drain spaghetti, then return to saucepan. • Meawhile, finely chop celery and onion (see ingredients). Grate carrot.
TIP: 'Al dente' pasta is cooked through but still slightly firm in the centre. Little cooks: Older kids can help add the pasta to the saucepan under adult supervision. Remember the water is boiling, so be careful!
• While the pasta is cooking, heat a large frying pan over medium-high heat with a drizzle of olive oil. Cook beef mince, breaking up with a spoon, until just browned, 3-4 minutes. • Add celery, onion and carrot and cook, stirring, until softened, 4-5 minutes. ~~~~~~~~~~ MODULAR STEP ~~~~~~~~~~ • While the pasta is cooking, heat a large frying pan over medium-high heat with a drizzle of olive oil. Cook plant-based mince, breaking up with a spoon, until just browned, 4-5 minutes • Add celery, onion and carrot and cook, stirring, until softened, 4-5 minutes.
• Reduce the frying pan to medium heat. Add Nan's special seasoning and garlic & herb seasoning and cook, until fragrant, 1 minute. • Add cream (see ingredients) and the reserved pasta water and cook, stirring, until warmed through, 1 minute.
Little cooks: Take charge by adding the spice blends!
• Divide spaghetti between bowls in the shape of a nest. Spoon beef mixture into centre of nest. • Sprinkle over grated Parmesan cheese. Enjoy!
