• Trim baby broccoli. Slice lemon into wedges • Heat a frying pan over medium-high heat • Cook baby broccoli with a dash of water until tender, 5 mins • Add spinach and a squeeze of lemon juice, then stir until wilted • Transfer to a plate.
• In a bowl, combine spice blend, chicken and a drizzle of olive oil • Return frying pan to high heat with a drizzle of oil • Cook chicken until cooked through, 3-4 mins each side.
• Pierce a few holes in potato packet • Microwave until soft and steaming, 4-5 mins • Plate up greens, potatoes and chicken • Serve with smokey aioli and remaining lemon wedges.
