• Heat frying pan over medium-high heat • Toast pine nuts, tossing, until golden, 3-4 mins. Transfer to a bowl • In a separate bowl, combine pork, spice blend and a drizzle of olive oil • Return frying pan to medium-high heat with a drizzle of oil. Cook pork, until cooked through, 3-4 mins each side
• Slice ciabatta in half. Toast or grill to your liking, then cut or tear into chunks • Roughly chop cucumber and tomato
• In a separate bowl, combine cucumber, tomato, ciabatta, lettuce mix and Italian dressing. Season • Slice pork • Plate up salad and pork. Top with romesco (add less if desired!) • Sprinkle with cheese and toasted nuts. Tear over basil to serve
