Preheat the oven to 240°C/220°C fan-forced. Cut the potato into wedges, then place on a lined oven tray. Drizzle with olive oil, season with salt, sprinkle with the mixed sesame seeds and toss to coat. Spread out evenly, then bake until tender, 20-25 minutes.

While the wedges are baking, finely chop the garlic. Zest the lemon to get a pinch, then slice into wedges. Roughly chop the baby spinach leaves. Thinly slice the celery. Finely chop the brown onion. In a small bowl, combine the teriyaki sauce, soy sauce, lemon zest, a squeeze of lemon juice and the water. Set aside.

When the wedges have 10 minutes cook time remaining, heat a large frying pan over a medium-high heat with a drizzle of olive oil. Cook the pork mince and onion, breaking up with a spoon until just browned, 4-5 minutes.

Add the garlic to the pork and cook until fragrant, 1 minute. Add the teriyaki sauce mixture and cook until slightly reduced, 1-2 minutes.

In a large bowl, add the slaw mix, celery, baby spinach, mayonnaise and a squeeze of lemon juice. Toss to combine. Season to taste.

Divide the sesame wedges between plates and top with the teriyaki pork. Sprinkle over the crispy shallots and tear over the coriander. Serve with the creamy slaw and any remaining lemon wedges.
