Perfect Poached & Boiled Eggs

Speedy scrambled eggs

Ingredients

  • Two eggs
  • A knob of butter
  • Salt and pepper

Instructions

  1. Beat two eggs with a fork and season with salt and pepper.
  2. Melt butter in a non-stick frying pan over medium-low heat, then add eggs.
  3. Cook, stirring, for two minutes. Serve with thickly cut buttery toast.

Perfect fried eggs

Ingredients

  • Two eggs
  • A glug of vegetable oil
  • Salt and pepper

Method

  1. Heat oil in a non-stick frying pan over medium-high heat, and crack the egg directly into the hot pan.
  2. Add salt and pepper and fry for two to three minutes.

For a crispy fried egg, tilt the pan and carefully spoon the hot oil over the edges of the egg.

Silky poached eggs

Ingredients

  • One egg
  • 1 tbsp white wine vinegar

Method

  1. Add half a cup of white wine vinegar to your gently bubbling water.
  2. Stir in nicely, then crack the egg into a small bowl before gently pouring it into the water.
  3. Allow to cook for two to four minutes (two minutes for a runny yolk) and spoon out with a slotted spoon.
  4. Enjoy on toast, muffins, or bagels with avocado, smoked salmon, cream cheese, or spinach and ham.

Soft-boiled eggs

Ingredients

  • One egg
  • Salt (optional)
  • Splash of vinegar (optional)

Method

Start by placing the egg in a pan and covering it with cold water —about an inch above the egg. For added flavour and to help prevent cracking, add a pinch of salt and a splash of vinegar. Heat the pan over medium-high heat until the water reaches a gentle boil, then promptly remove it from the heat. Cover the pan and let the egg sit for four minutes to achieve a perfectly soft-boiled yolk.

Hard Boiled Eggs

Ingredients

  • One egg
  • Salt (optional)
  • Splash of vinegar (optional)

Method

Place the egg in a pan and cover it with cold water, ensuring the water is at least an inch above the egg. For easier peeling and to minimise cracking, add a pinch of salt and a splash of vinegar. Bring the water to a rolling boil over medium-high heat, then remove the pan from the heat, cover it, and let the egg sit for 10 minutes.

This results in a fully cooked, creamy yolk —perfect for adding extra protein and flavour to dishes like slow-cooked pork ramen-style.
