• Preheat oven to 240°C/220°C fan-forced. • Place the butter in a heatproof bowl and microwave in 30 second bursts until melted. • Cut potato into bite-sized chunks. • Place potato on a lined oven tray. Drizzle with olive oil and the melted butter, then season with salt. Toss to coat, spread out evenly, then roast until tender, 20-25 minutes.
• Meanwhile, trim green beans. Cut broccoli (see ingredients) into small florets, then roughly chop stalk. • In a medium bowl, combine garlic & herb seasoning, a drizzle of olive oil and a pinch of salt and pepper. Add pork loin steaks and turn to coat.
• Heat a large frying pan over medium-high heat with a drizzle of olive oil. When oil is hot, cook pork until cooked through, 3-4 minutes each side (depending on thickness). • Remove the pan from heat, then add a drizzle of honey, turning pork to coat. Transfer to a plate and cover with foil to rest for 5 minutes. • Wipe out the frying pan, then return to medium-high heat with a drizzle of olive oil. Cook green beans and broccoli with a dash of water, tossing, until tender, 6-7 minutes. Season to taste.
• Slice honey and garlic glazed pork. • Divide pork, roasted butter potatoes and greens between plates. • Serve with garlic aioli.
