Instructions

1
1

• Preheat oven to 240°C/220°C fan-forced. • Cut kumara into fries, then place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. • Spread out evenly, then bake until tender, 20-25 minutes.

2
2

• Meanwhile, thinly slice onion (see ingredients). Slice tomato into rounds.

3
3

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook onion and diced bacon, breaking up with a spoon, until softened and browned, 5-6 minutes. • Reduce heat to medium. Add the balsamic vinegar, brown sugar and a splash of water and mix well. Cook until dark and sticky, 3-5 minutes. Transfer to a small bowl.

4
4

• Wipe out the frying pan and return to medium-high heat with a drizzle of olive oil. • SPICY! The spice blend is mild, but use less if you're sensitive to heat. Cook pulled pork and All-American spice blend, until fragrant, 2 minutes. • Add BBQ sauce and a splash of water, stirring, until well combined, 1 minute.

5
5

• Meanwhile, halve burger buns and bake directly on a wire oven rack until heated through, 2-3 minutes. • In a medium bowl, combine mixed salad leaves and a drizzle of white wine vinegar and olive oil. Season.

Little cooks: Kids can help dress the salad.

6
6

• Top bun bases with some bacon jam. Spread bun tops with mayonnaise. • Top buns with American pulled pork, tomato and mixed salad leaves. • Serve with kumara fries. Enjoy!

Little cooks: Take the lead and help build the burgers!
