• Thinly slice apple into half-moons. Pick and thinly slice mint leaves. • Roughly chop walnuts.
• Heat a medium frying pan over medium-high heat. • Toast walnuts, tossing, until golden, 3-4 minutes. Set aside.
• In a large bowl, combine apple, mint, slaw mix and dill & parsley mayonnaise. Season with salt and pepper.
• Transfer apple and mint slaw to a serving bowl. • Top with toasted walnuts to serve. Enjoy!
