Whip up an Indonesian takeaway classic at home with this vibrant, flavour-packed prawn nasi goreng. Succulent prawns, carrot and baby spinach are stir-fried with jasmine rice in a delicious combo of sweet kecap manis, fragrant garlic and Southeast Asian spices before being finished with a fried egg, tomato, a spicy kick of sambal and plenty of crispy shallots!

Cooking Steps

Cook the rice

    • • Boil the kettle.
      • Half-fill a medium saucepan with boiling water.
      • Add jasmine rice and a pinch of salt and cook, uncovered, over high heat until tender, 12-14 minutes.
      • Drain, rinse with warm water and set aside.

  • Meanwhile, thinly slice garlic. 
  • Thinly slice carrot into rounds.
  • Cut tomato into thin wedges.
Fry the eggs

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • When oil is hot, crack the eggs into the pan. Cook until egg whites are firm and yolks are cooked to your liking, 4-5 minutes.
  • Transfer to a plate and cover to keep warm.
Cook the prawns & tofu

• Wipe out the frying pan, then return to medium-high heat with a drizzle of olive oil.
• Cook peeled prawns and carrot, tossing, until prawns are starting to curl up and tender, 4-5 minutes.
• In the last minute, add Southeast Asian spice blend and garlic and cook until fragrant, 1 minute.

Bring it all together

• To the pan with prawns, add cooked rice and gently stir to combine, 1-2 minutes.
• Add kecap manis and the soy sauce, tossing to coat, 1 minute.
• Remove pan from heat, then stir through baby spinach leaves until just wilted and combined.

Finish & serve

• Divide Indonesian prawn and tomato nasi goreng between bowls.
• SPICY! The sambal is slightly spicy. Use less if you’re sensitive to heat. Top with fried egg, tomato, sambal (see ingredients) and crispy shallots (see ingredients) to serve. Enjoy!
