juicy tomato, bacon, creamy Brie, avocado and tangy ‘basil pesto’.

- Thinly slice tomatoes lengthways.
- Slice avocado in half, scoop out flesh and thinly slice.
- Halve lemon.
- Thinly slice brie into strips.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Add diced bacon and cook, breaking up with a spoon, until golden, 6-7 minutes.
- In a small bowl, squeeze the whole lemon, add the honey and a generous drizzle of olive oil. Stir to combine. Season.
- On a serving plate or platter, place the bowl with the dressing in the centre.
- Carefully arrange the spinach & rocket mix around the bowl so that it resembles a wreath.
- Arrange tomato, avocado and brie slices on top of the salad. Sprinkle over bacon.
- Dollop over basil pesto to serve. Enjoy!
