Spicy Veggie Burger Recipe

Ingredients:
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cooked quinoa
- 1 cup grated vegetables (such as carrots, zucchini, capsicums)
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs or almond flour
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water (acts as a binder)
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste for desired spice level)

Preheat your oven to 190°C and line a baking sheet with parchment paper.

In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture. Add the cooked quinoa, grated vegetables, chopped onion, minced garlic, breadcrumbs or almond flour, flaxseed mixture, olive oil, ground cumin, smoked paprika, cayenne pepper, salt, and pepper to the mashed beans. Mix until well combined.

Taste the mixture and adjust the seasoning as needed. If you want it spicier, add more cayenne pepper. Divide the mixture into equal portions and shape them into patties with your hands. If the mixture feels too wet, you can add more breadcrumbs or almond flour to help bind it.

Place the patties onto the prepared baking sheet and bake for 25-30 minutes, flipping halfway through, until they are firm and lightly browned on both sides. Once cooked, remove the spicy veggie burgers from the oven and let them cool for a few minutes before serving.
