1 packet
Baby Spinach Leaves
1 drizzle
olive oil
1 tsp

20 g

(Contains: Milk)
1 drizzle

• Drain sweetcorn. Pat salmon dry with paper towel and season both sides with salt and pepper. • Heat a large frying pan over high heat. Cook corn kernels until lightly browned, 4-5 minutes. Transfer to a large bowl. TIP: Cover the pan with a lid if the kernels are ‘popping’ out.

• Return frying pan to medium-high heat with a drizzle of olive oil. • When oil is hot, cook salmon, skin-side down first, until just cooked through, 2-4 minutes each side. • Remove pan from heat, then add sweet & savoury glaze. Toss to coat. Season to taste. TIP: Patting the skin dry helps it crisp up in the pan!

• To the bowl with corn, add baby spinach leaves and a drizzle of white wine vinegar and olive oil. Season to taste. • Microwave basmati rice until steaming, 1 minute.

• Divide rapid rice between bowls. • Top with sweet & savoury salmon and corn salad. • Dollop with sour cream and drizzle mild chipotle sauce. • Serve with corn chips. Enjoy!
