- Preheat oven to 240°C/220°C fan-forced. Thinly slice spring onion.
- Place potato fries on a lined oven tray. Drizzle with olive oil and toss to coat. Bake until tender, 20-25 minutes.
- In the last 5 minutes of cook time, remove from oven, sprinkle with mozzarella cheese and bake until just melted, 1-2 minutes.
TIP: If your oven tray is crowded, divide between two trays.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Add diced bacon and cook, breaking up with a spoon, until golden, 6-7 minutes.
- Cut halloumi into 1cm-thick slices.
- In a medium bowl, sprinkle with Louisiana spice blend.

- Cook halloumi until golden brown, 1-2 minutes each side. Set aside on a paper towel-lined plate.
- In a large bowl, combine baby spinach & rocket mix, tomato, a drizzle with olive oil and vinegar. Season to taste.
- Divide poutine inspired fries between plates. Pour over gravy.
- Serve with crispy fried halloumi, rocket and tomato salad. Enjoy!
