Cooking Steps

Bake the fries

  • Preheat oven to 240°C/220°C fan-forced. Thinly slice spring onion.
  • Place potato fries on a lined oven tray. Drizzle with olive oil and toss to coat. Bake until tender, 20-25 minutes. 
  • In the last 5 minutes of cook time, remove from oven, sprinkle with mozzarella cheese and bake until just melted, 1-2 minutes. 

TIP: If your oven tray is crowded, divide between two trays.

Cook the bacon

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Add diced bacon and cook, breaking up with a spoon, until golden, 6-7 minutes.
Cook the halloumi

  • Cut halloumi into 1cm-thick slices.
  • In a medium bowl, sprinkle with Louisiana spice blend.
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook halloumi until golden brown, 1-2 minutes each side. Set aside on a paper towel-lined plate.
Finish & serve

  • In a large bowl, combine baby spinach & rocket mix, tomato, a drizzle with olive oil and vinegar. Season to taste.
  • Divide poutine inspired fries between plates. Pour over gravy.
  • Serve with crispy fried halloumi, rocket and tomato salad. Enjoy!
