Transport yourself to the Mediterranean with this fuss-free traybake! Chicken drumsticks are seasoned with paprika and oregano, then baked alongside citrusy potato, capsicum, courgette and onion until everything is golden and tender. Finished with a sprinkle of fresh parsley and a dollop of creamy garlic dip, this is an easy dinner the whole whānau will enjoy.

- Preheat oven to 240°C/220°C fan-forced.
- Roughly chop capsicum. Cut potato into large chunks.
- Cut courgette into thick rounds. Slice red onion and tomato into thick wedges.
- Slice lemon into wedges. Peel garlic cloves.
- In a large baking dish, combine chicken drumsticks, paprika spice blend, a drizzle of olive oil and a pinch of salt and pepper.
- Add potatoes, veggies and garlic cloves to the dish, sprinkle over dried oregano (see ingredients) and chicken stock powder. Add a generous squeeze of lemon juice and drizzle of olive oil. Toss to combine.
- Cover tightly with foil and bake for 20 minutes.
TIP: If your baking dish is crowded, divide between two dishes.
- Remove from oven, turn drumsticks and spoon over any juices. Bake, uncovered, until golden brown and cooked through, a further 20-25 minutes.
- In the last 12 minutes of cook time, remove dish from oven, add peeled prawns and a drizzle of olive oil. Season with salt and pepper and toss to combine. Bake until pink and starting to curl up, a further 8-12 minutes.
TIP: Chicken is cooked through when it's no longer pink inside.
TIP: Add a splash of water if the chicken looks dry.

- Tear over parsley, then serve with garlic dip and any remaining lemon
