• Preheat oven to 220°C/200°C fan-forced.
• Cut kumara into bite-sized chunks and place on a lined oven tray.
• Drizzle with olive oil, season with salt and toss to coat. Roast until tender, 20-25 minutes.
• Meanwhile, grease and line a square cake tin with baking paper.
• In a small saucepan, melt the butter over medium-high heat, until beginning to brown, 3-4 minutes. Set aside until slightly cooled, 5 minutes

• When the kumara is done, transfer to a bowl and mash with a fork.
• In a large bowl, mix the browned butter and brown sugar with a spatula until well combined.
• Add the egg and mix until smooth. Stir in basic sponge mix and the cinnamon to form a thick dough. Add mashed kumara, dark choc chips and a pinch of salt, then stir until combined.
• Transfer batter into cake tin and flatten with a spatula.

• Bake for 20-25 minutes or until golden. Allow to completely cool in the tin.

• Slice kumara and choc chip blondie. Drizzle over oozy caramel sauce and a pinch of salt to serve. Enjoy!
