Cooking Steps

Get prepped

  • Preheat BBQ to high heat.
  • Halve burger buns. 
  • Drain pineapple slices (see ingredients). 
Assemble the patties

  • In a large bowl, combine beef mince, fine breadcrumbs, kiwi spice blend and the egg (for the patties).
  • Using damp hands, shape beef mixture into 2cm-thick patties (1 per person).
Fry the eggs & grill the pineapple

  • On a BBQ flat plate, heat a drizzle of olive oil over medium-high heat. 
  • When oil is hot, crack the eggs (for frying) onto the flat plate. Cook until egg whites are firm and yolks are cooked to your liking, 4-5 minutes.
  • Meanwhile, grill pineapple until charred, 2-4 minutes each side. 
  • Transfer both to a plate. 

No BBQ? Heat a large frying pan over medium-high heat with a drizzle of olive oil. Cook until egg whites are firm and yolks are cooked to your liking, 4-5 minutes.

Grill the burger patties

  • Grill beef patties for 3-5 minutes each side, until charred and cooked through. 

No BBQ? Heat a large frying pan over high heat with a drizzle of olive oil. Cook beef patties until just cooked through, 4-5 minutes each side.

Grill the buns

  • When the patties are done, grill buns, cut-side down, until lightly golden, 2-3 minutes.

No BBQ? Grill or toast buns to your liking.

Finish & serve

  • In a medium bowl, combine mixed salad leaves with a drizzle of white wine vinegar and olive oil.
  • Spread burger buns with lime and chilli mayo, then top with BBQ beef pattes, chargrilled pineapple slices and and salad leaves.
  • Serve with corn chips. Enjoy!
