
Zest up your dinner table with a vibrant spin on a classic featuring succulent salmon coated in our tangy lemon pepper seasoning. You'll air fry protein-packed chickpeas and broccoli with a kick of chilli flakes before tossing them with crisp cos lettuce, Caesar dressing, a squeeze of fresh lemon and a generous dusting of Parmesan cheese for a light yet satisfying meal.

• Set your air fryer to 200°C. Drain and rinse chickpeas.
• Chop broccoli (including stalk!) into small florets.
• In a medium bowl, combine chickpeas, broccoli, a pinch of chilli flakes
(if using) and a good drizzle of olive oil. Season with salt and pepper.
• Place chickpeas and broccoli in the air fryer basket and cook until golden,
12-15 minutes, shaking the basket halfway.
• Transfer to a large bowl and set aside to cool slightly.
TIP: No air fryer? Preheat oven to 220°C/200°C fan-forced. Place chickpeas and broccoli evenly on a lined oven tray. Roast until golden, 15-20 minutes.


• When the chickpeas and broccoli have 5 minutes remaining, heat a large
frying pan over medium-high heat with a drizzle of olive oil.
• Cook chicken breast strips and lemon pepper seasoning, turning
occasionally, until browned and cooked through, 6-8 minutes.
TIP: Chicken is cooked through when it is no longer pink inside.
TIP: The spice blend will char slightly in the pan, this adds to the flavour!

• To the bowl with broccoli and chickpeas, add lettuce, grated Parmesan
cheese, a good squeeze of lemon juice and a drizzle of olive oil. Toss to
combine, then season to taste with salt and pepper.
• Divide chickpea broccoli salad between bowls. Top with zesty chicken and
another pinch of chilli flakes (if using). Drizzle over Caesar dressing and
serve with any remaining lemon wedges. Enjoy!
