Cooking Steps

  • Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
  • Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
  • Bake until tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide between two trays.

  • Meanwhile, place the corn cobs in a baking dish and top with the softened butter. Season with salt.
  • Roast until tender and slightly charred, 15-20 minutes. 
  • In the last 5 minutes of cook time, sprinkle with Cheddar cheese and roast until melted and golden.

  • Slice tofu horizontally to get 1 piece per person. 
  • In a shallow bowl, place one-step coater. Season with salt and pepper.
  • In a second shallow bowl, whisk the egg.
  • Dip tofu slices into egg followed by the crumb mixture to coat, pressing the crumbs on so they stick. Set aside on a plate.
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • When the oil is hot, shake excess mixture off the tofu and cook, turning occasionally, until golden, 4-6 minutes.

  • Divide potato fries, easy crumbed tofu and cheesy corn between plates. Serve with chargrilled capsicum relish. Enjoy!
  • ELEVATE ME: If you added extra ingredients to this recipe, thinly slice spring onion. Crumble fetta cubes over corn and garnish with spring onion. Serve fries with sour cream.
