spring onions

Mango Mayonnaise
(Contains: Soy; )

Drain and chop pineapple. Slice capsicum. Grab a bowl. Combine jerk seasoning, a drizzle of oil and chicken. Heat oil in frying pan over high heat. Cook chicken, pineapple and capsicum, tossing, until cooked through, 3-4 mins.

Meanwhile, cut lemon into wedges. Slice spring onion. Grab a second bowl. Combine slaw mix, spring onion and a good squeeze of lemon juice. Drizzle with olive oil, season and toss.

Now, zap tortillas in microwave for 10 second bursts, until warm. Spread mango mayo (see ingredients) over tortillas. Fill with chicken mixture and slaw. Serve with remaining lemon wedges.
