- Thinly slice red onion (see ingredients).
- In a small bowl, combine the vinegar and a good pinch of sugar and salt.
- Scrunch sliced onion in your hands, then add it to pickling liquid. Add enough water to just cover onion. Set aside for 10 minutes.
- • Meanwhile, peel mini watermelon and cut into bite-size cubes.
- • Pick mint and parsley leaves.
- Drain onion.
- In a large bowl, combine watermelon, pickled onion, parsley, mint and a good drizzle of olive oil. Season with salt and pepper and toss to combine.
- Place watermelon salad in a serving plate, then crumble over cow's milk feta. Enjoy!
