
Courgette is the most versatile ingredient, it takes on whatever flavour you add to it! Tonight we're adding a smokey twist with a sprinkling of our vibrant paprika spice blend. Crumble over some tangy feta to round out this epic side dish.

Courgette
• Preheat oven to 240°C/220°C fan-forced.
• Cut courgette into quarters lengthways. Thinly slice spring onion.
• Place on a lined oven tray, sprinkle with paprika spice blend and drizzle with olive oil. Toss to coat. Roast until tender, 20-25 minutes.
• Transfer to a serving dish and crumble over cow's milk feta (see ingredients). Garnish with spring onion. Enjoy!
