• Preheat oven to 180°C/160°C fan-forced. Grease and line the cake tin with baking paper. • Finely chop apple. Zest lemon, then cut in half. Measure 200ml vegetable oil. • In a medium heatproof bowl, place the butter. Microwave in 10 second bursts until melted. • Add slivered almonds and classic oat mix (see ingredients) and stir to combine.

• In a large bowl, place vegetable oil, the eggs, vanilla-flavoured essence, brown sugar and half the lemon zest. Beat with electric beaters until light and fluffy, 2-3 minutes. • Using a wooden spoon, fold in the cinnamon and basic sponge mix until just combined. Add apple and gently fold until just combined.

• Pour cake batter into the lined cake tin, then evenly sprinkle crumble mix over. • Bake for 45 minutes to 1 hour or until firm to touch and a skewer inserted in the centre comes out clean. Set aside to cool completely in the tin. • While the cake is cooling, combine icing sugar, a generous squeeze of lemon juice, the water and remaining lemon zest in a medium bowl, mixing until it reaches a drizzling consistency.
TIP: Add a splash of water to the glaze if it's too thick.

• Transfer spiced apple and almond crumble cake to a serving plate or board. Drizzle lemon icing over cake. • Slice and serve with remaining icing. Enjoy!
