In a medium bowl, combine buttermilk pancake & waffle mix and the warm water. Slice lemon into wedges. Roughly chop roasted almonds.
In a large frying pan, heat a drizzle of olive oil over medium heat. When oil is hot, add 1/3 cups of the pancake batter in batches and cook until golden, 3-5 minutes each side. TIP: Use some butter for frying if preferred.
Divide pancakes between plates. Squeeze over some lemon juice. Top with passionfruit lemon sauce and almonds. Serve with any remaining lemon wedges.
