• In a bowl, combine chicken and spice blend with a drizzle of olive oil • Heat olive oil in a frying pan over medium-high heat • Cook chicken and bacon, breaking up bacon with a spoon until browned, 6-8 mins
• Prick a few holes in pumpkin packet. Microwave until steaming, 3 mins • Meanwhile, roughly chop cucumber and tomato
• In a second bowl, combine cucumber, tomato, rocket mix, pumpkin and dressing. Season to taste • Plate up salad. Top with chicken and bacon. Serve with aioli. Enjoy!
