Each bite-sized piece is coated in golden panko breadcrumbs and a savoury All-American spice blend that’s big on flavour but gentle on the taste buds. With creamy mashed avocado and a side of garlic aioli, it’s a fun, hands-on meal that makes eating veggies (and protein!) the best part of the day.

Cooking Steps

Bake the wedges

  • Preheat oven to 220°C/200°C fan-forced. Peel kumara and cut into wedges.
  • Place kumara on an oven tray lined with baking paper. Drizzle with olive oil, sprinkle with crispy chip seasoning and toss to coat.
  • Spread out evenly, then bake until tender, 20-25 minutes.

  • Meanwhile, slice tomato into thin wedges.
  • Slice avocado in half, scoop out flesh and thinly slice.
Crumb the chicken

  • In a shallow bowl, combine the plain flour and all-American seasoning.
  • In a second shallow bowl, whisk the egg.
  • In a third shallow bowl, place panko breadcrumbs. Dip diced chicken into flour mixture to coat, then into egg, and finally in breadcrumbs. Set aside on a plate
Cook the chicken

  • When the wedges have 10 minute remaining, in a large frying pan, heat a drizzle of olive oil over high heat.
  • When oil is hot, cook chicken, tossing occasionally, until browned and cooked through, 5-6 minutes (cook in batches if your pan is getting crowded).

TIP: Chicken is cooked through when it is no longer pink in the middle.

Toss the slaw

  • In a medium bowl, combine slaw mix, garlic aioli and a drizzle of white wine vinegar. Season to taste.
Finish & serve

  • Divide crispy kumara wedges, crumb-a-licious chicken, tomato wedges, rainbow slaw and avocado slices between plates. Enjoy!
