Cooking Steps

Bake the fries

  • Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
  • Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
  • Bake until tender, 20-25 minutes.

TIP: If your oven tray is crowded, divide between two trays.

Get prepped

  • Meanwhile, finely shred cos lettuce (see ingredients).
  • Thinly slice tomato into rounds.
  • Thinly slice onion.
  •  In a medium bowl, combine beef mince, Kiwi spice blend, fine breadcrumbs and the egg.
Char the onions

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook onion, until tender, 4-5 minutes. Transfer to a bowl, season and cover to keep warm.
Cook the beef patties

  • Wipe out frying pan and return to medium-high heat with a drizzle of olive oil.
  • Cook beef patties until just cooked through, 4-5 minutes each side (cook in batches if your pan is getting crowded). Transfer to a plate to rest and cover to keep warm.
Fry the eggs and bake the buns

  • Wipe out frying pan and return to medium-high heat with a drizzle of olive oil.
  • When oil is hot, crack the eggs into the pan. Cook until egg whites are firm and yolks are cooked to your liking, 4-5 minutes.
  • Meanwhile, halve bake-at-home burger buns. Place buns, cut-side up, on a second lined oven tray and sprinkle top of buns with shredded Cheddar cheese. Bake until cheese is melted, 2-3 minutes.
Finish & serve

  • Spread each burger bun base with garlic aioli.
  • Top with some cos, a beef patty, tomato rounds, charred onions, beetroot relish and a fried egg.
  • Serve with potato fries. Enjoy!
