Cooking Steps

  • Trim and halve green beans. Add green beans and a splash of water to a microwave-safe bowl, then cover with a damp paper towel.
  • Microwave green beans on high until just tender, 2-4 minutes. Drain green beans and transfer to a large bowl. 
  • Meanwhile, thinly slice radish. Peel and thinly slice orange into wedges. • In a medium bowl, place halloumi and cover with water to soak.

• Drain halloumi and pat dry. Cut the halloumi into 1cm-thick slices. • In a large frying pan, heat a drizzle of olive oil over medium-high heat. • Cook halloumi until golden brown, 1-2 minutes each side. • Remove pan from heat, add the balsamic vinegar, brown sugar and a splash of water and turn to coat. • Transfer to a plate to rest.

• Meanwhile, to bowl with green beans, add mixed salad leaves, radish, orange, dijon mustard and a drizzle of white wine vinegar and olive oil. Toss to combine and season.

• Divide balsamic glazed halloumi and orange and green bean salad between plates. Enjoy
