We’re getting into the ‘spirit’ of spooky season with a spooktacular twist on the classic beef burger. Whipping up your burger toppings will be a breeze, but all the fun comes when it’s time to plate up. Monster-fy your burger with chilli for horns and cucumber for the long tongue. Fang-tastic!

Cooking Steps

Cook the fries

• Preheat oven to 240°C/220°C fan-forced.
• Cut potato into fries.
• Place fries on a lined oven tray. Drizzle with 
olive oil, season with salt and toss to coat.
• Bake until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide the fries 
between two trays.

Get prepped

• Meanwhile, using a vegetable peeler, peel 
cucumber(see ingredients) into ribbons 
(stopping when you reach the centre seeds).
Grate beetroot. Halve fresh chilli (if using). 
Grate Totara Tasty Cheddar.
• In a medium bowl, combine beef mince, Kiwi 
spice blend, fine breadcrumbs, the egg and a 
pinch of salt and pepper.
• Shape beef mixture into 2m-thick patties
(1 per person). 
Little cooks: Join the fun by helping combine the 
ingredients and shaping the mixture into patties.

Make the bacon-beetroot relish

• In a large frying pan, heat a good drizzle of olive 
oil over medium-high heat. Cook beetroot, 
diced bacon, the balsamic vinegar and brown 
sugar until softened, 2-3 minutes.
• Add the water and onion chutney and cook, 
stirring occasionally, until reduced, 2-3 minutes. 
Season to taste and transfer to a bowl.

Cook the beef patties

• Wash and dry the frying pan, then return to 
medium-high heat with a drizzle of olive oil.
• Cook beef patties until just cooked through,
4-5 minutes each side (cook in batches if your 
pan is getting crowded).
• In the last 1-2 minutes of cook time, sprinkle 
Cheddar cheese over patties and cover with a 
lid (or foil), until cheese melts.

Toast burger buns

• Meanwhile, halve burger buns and bake 
directly on a wire oven rack until heated 
through, 2-3 minutes. 
• Roughly tear cos lettuce leaves
(see ingredients).

Finish & serve

• Spread each burger bun with garlic aioli.
• Top with a beef patty. Lay cucumber ribbons 
over the top of the patty so it hangs over the 
edge to resemble a ‘tongue’.
• Continue building with bacon-beet relish and 
cos lettuce.
• Skewer chillis on 4 toothpicks (8 toothpicks for 
4 people) and push 2 through the top of each 
bun to make the ‘horns’. Be sure to remove the 
toothpicks before eating.
• Serve with fries. Enjoy!
