Cooking Steps

Get prepped
1

• Slice avocado in half, scoop out flesh and thinly slice. Drain the sweetcorn.

Cook the veggie mince
2

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. • Cook beef mince and sweetcorn, breaking up with a spoon, until just browned, 4-5 minutes. Drain any excess oil from the pan. • SPICY! The spice blend is mild, but use less if you're sensitive to heat. Add tomato paste and Tex-Mex spice blend and cook until fragrant, 1 minute. • Add the water and brown sugar and simmer until slightly reduced, 1-2 minutes.

Toss the slaw
3

• Meanwhile, combine shredded cabbage mix and a drizzle of white wine vinegar and olive oil in a medium bowl. • Microwave mini flour tortillas on a plate in 10 second bursts, until warmed through.

Serve up
4

• Top tortillas with slaw, Mexican beef mince and avocado. • Drizzle over plant-based mayo to serve. Enjoy!
