- Preheat oven to 240°C/220°C fan-forced.
- Cut pumpkin, brown onion and apple into 1 cm-thick wedges.
- Cut potato into large chunks.
TIP: Peel the pumpkin if you prefer and scrape out the seeds, if necessary!
- Place veggies on a lined oven tray. Season with salt and drizzle with olive oil and toss to coat.
- Roast until just tender, 15 minutes.
- Remove tray from oven and add lemon & herb chicken sausages on top of the veggies. Drizzle with olive oil and turn to coat.
- Bake until cooked through, 12-15 minutes.
- Once the traybake is done, add baby spinach & rocket mix and a drizzle of balsamic vinegar, tossing to combine.
- Divide chicken sausage and apple traybake between plates.
- Drizzle over honey mustard sauce to serve. Enjoy!
