Cooking Steps

Cook the beef & chickpeas
1
  • Drain and rinse chickpeas.
  • Discard any liquid from beef strip packaging. In a large frying pan, heat a drizzle of olive oil over high heat.
  • When oil is hot, cook beef strips and chickpeas in batches, tossing, until browned and cooked through, 1-2 minutes. Transfer to a plate.
  • Add Middle Eastern seasoning and cook until fragrant, 1 minute.

TIP: Cooking the meat in batches over a high heat helps it stay tender.

TIP: Add a splash of water if the chickpeas look dry.

Make the salad
2
  • Meanwhile, Roughly chop coriander, mint and roasted almonds.
  • In a large bowl, combine the honey and a drizzle of vinegar and olive oil. Season and add shredded cabbage mix, coriander, mint, julienned carrot, currants and almonds and toss to coat.
Heat the bread
3
  • Microwave pita bread on a microwave-safe plate until warmed through, 1 minute.
Finish & serve
4
  • Halve pita bread and fill with garlic dip, Middle Eastern beef and chickpeas and some herby slaw. Drizzle over dill & parsley mayonnaise.
  • Serve with any remaining slaw. Enjoy!
