- Peel potato and cut into large chunks.
- Chop broccoli (including stalk!) into small florets.
- Slice lemon into wedges.
- Season beef rump with salt and pepper.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- When oil is hot, cook the beef for 4-5 minutes each side for medium-rare, or until cooked to your liking. Transfer to a plate to rest.
- Meanwhile, bring a medium saucepan of water to the boil.
- Cook potato in the boiling water for 6 minutes. Place a colander or steamer basket on top and add broccoli.
- Cover and steam until broccoli is tender, and potatoes are easily pierced with a fork, for another 7-8 minutes.
- Transfer broccoli to a bowl and add a generous squeeze of lemon juice. Season and cover to keep warm. Drain potatoes and return to saucepan. Add shredded Cheddar cheese, the milk, butter and a pinch of salt and mash until smooth.
- In a medium bowl, combine gravy granules and the boiling water, whisking, until smooth, 1 minute.
- Slice beef.
- Divide beef, cheesy mash and steamed broccoli between plates. Pour over gravy to serve. Enjoy!
- ELEVATE ME: If you've added extra ingredients to your recipe, pick tyme leaves. In a small microwave-safe bowl, combine red wine jus, thyme leaves and a splash of water. Microwave in 30 second bursts, until warmed through. Pour red wine just over beef and tear mint leaves over broccoli to serve.
