• Preheat oven to 220°C/200°C fan-forced. Peel orange kumara and cut into thin fries.
• Place kumara on a lined oven tray. Drizzle generously with olive oil, season with salt and pepper and toss to coat.
• Spread out evenly, then roast until tender, 20-25 minutes.
Little cooks: Kids can help toss the fries.

• Meanwhile, thinly slice onion (see ingredients) and tomato.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook onion, stirring, until softened, 4-5 minutes.
• Reduce heat to medium, then add the balsamic vinegar, water and the brown sugar and stir to combine. Cook until dark and sticky, 3-5 minutes. Transfer to a medium bowl and set aside.

• Meanwhile, finely chop garlic.
• In a large bowl, combine garlic, the egg, beef mince, Nan's special seasoning and fine breadcrumbs. Season with salt and pepper.
• Using damp hands, shape beef mixture into patties (2 per person) slightly larger than your burger buns.
Little cooks: Join the fun by helping combine the ingredients and shaping the mixture into patties!

• When the fries have 10 minutes cook time remaining, wipe out the frying pan and return to medium-high heat. Cook patties until just cooked through, 4-5 minutes each side.
• In the last 1-2 minutes of cook time, sprinkle shredded Cheddar cheese over the top and cover with a lid (or foil) to melt the cheese.
TIP: Reduce the heat of the pan to medium if the patties begin to char.
TIP: Cook in batches for the best results.

• Halve burger buns and bake directly on a wire oven rack until heated through, 2-3 minutes.
• Add mayonnaise to the bowl with the caramelised onion and stir to combine.

• Top burger buns with caramelised onion mayo, mixed salad leaves, a cheesy beef patty and some tomato.
• Serve with kumara fries. Enjoy!
