• Preheat oven to 220°C/200°C fan-forced.
• Halve baby potatoes and place potatoes on
a lined oven tray. Drizzle with olive oil, season
with salt and toss to coat.
• Spread out evenly, then roast until tender,
20-25 minutes.

• Meanwhile, trim baby broccoli.
• Trim green beans (see ingredients).
• Zest lime and slice into wedges.

• Pat hapuku fillet dry with paper towel and
season both sides with salt and pepper.
• Wrap hapuku with streaky bacon, slightly
overlapping each rasher.
• Place hapuku on a second lined oven tray and
lightly drizzle or spray with olive oil.
• Bake until fish is just cooked through and bacon
is golden, 12-15 minutes.
TIP: The fish is cooked through when it turns from
translucent to white.

• In a large frying pan, heat a drizzle of olive oil
over medium-high heat.
• Cook baby broccoli and green beans, until
tender, 5-6 minutes.
• Stir in garlic paste and flaked almonds in the
last minute and cook until golden. Season to
taste with salt and pepper. Transfer to a plate
and cover to keep warm.
TIP: Add a dash of water to the pan to help speed up
the cooking process.

• Wipe out frying pan and return to medium heat.
• Add the butter, lime zest and a good squeeze of
lime juice and cook until melted, 1-2 minutes.
Season to taste.

• Divide bacon-wrapped hapuku, baby potatoes
and nutty sauteed greens between plates.
• Drizzle over lime butter sauce and serve with
remaining lime wedges. Enjoy!
