Cooking Steps

Pickle the red onion

  • Thinly slice red onion (see ingredients).
  • In a small bowl, combine the vinegar and a good pinch of sugar and salt.
  • Scrunch sliced onion in your hands, then add it to pickling liquid. Add enough water to just cover onion. Set aside for 10 minutes.

  • • Meanwhile, peel mini watermelon and cut into bite-size cubes. 
  • • Pick mint and parsley leaves. 
Bring it all together

  • Drain onion. 
  • In a large bowl, combine watermelon, pickled onion, parsley, mint and a good drizzle of olive oil. Season with salt and pepper and toss to combine. 
Finish & serve
