Cooking Steps

  • Preheat oven to 240°C/220°C fan-forced. Cut potato into fries.
  • Place on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat.
  • Bake until tender, 20-25 minutes. 
    TIP: If your oven tray is crowded, divide between two trays.

  • Meanwhile, drain and rinse black beans.
  • Slice avocado in half, scoop out flesh and roughly chop.
  • Roughly chop tomato, baby cos lettuce and mild chorizo.

  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook chorizo until golden, 4-6 minutes.
  • Add black beans and cook until slightly softened, 1-2 minutes.

  • Microwave large wraps on a plate in 10 second bursts until warmed through.
  • Spread wraps with garlic aioli then fill with cos lettuce, tomato, avocado, Cheddar cheese, chorizo and beans. Drizzle over mild chipotle sauce.
  • Fold the bottom of the wrap over the filling, then fold in the sides. Roll tightly from the bottom to form the burrito.

  • Heat burrito in a sandwich press for 2 minutes, until toasted and warmed through.

  • Cut chipotle chorizo and bean loaded burrito in half.
  • Serve with fries. Enjoy!
