Slice capsicum into strips. Drain sweetcorn (1/2 tin for 2P / 1 tin for 4P). Heat olive oil in a frying pan over high heat. Cook capsicum and corn, tossing, until softened and charred, 3-4 mins. Transfer to a bowl.

Meanwhile, cut lemon into wedges. Pat haloumi dry and cut into 8, even slices. In a bowl, combine spice blend and a drizzle of olive oil. Add haloumi and toss to coat. Return frying pan to medium-high heat with olive oil. Cook haloumi until golden brown, 1-2 mins each side.

Now, microwave tortillas for 10 second bursts, until warmed through. Add slaw, BBQ mayo and a good squeeze of lemon juice to the veggies. Season and toss. Fill tortillas with veggie slaw and haloumi. Tear over coriander. Serve with remaining lemon wedges.
