- Boil the kettle. Peel potato and cut into large chunks.
- Half-fill a large saucepan with boiling water, then add a generous pinch of salt. Cook potato in the boiling water over high heat until easily pierced with a fork, 12-15 minutes. Drain.
- Return saucepan to medium-high heat with a drizzle of olive oil. Cook diced bacon, breaking up with a spoon, until golden, 6-7 minutes. Remove from heat.
- Return potatoes to pan, add the milk, butter and season with salt. Mash until smooth. Cover to keep warm.
TIP: Save time and get more fibre by leaving the potato unpeeled.
- Meanwhile, chop broccoli (see ingredients/including stalk!) into small florets. Thinly slice red apple into wedges.
- In a shallow bowl, combine savoury seasoning, the plain flour and a pinch of salt. In a second shallow bowl, whisk the egg. In a third shallow bowl, place panko breadcrumbs.
- Dip diced chicken into flour mixture to coat, then into egg, and finally in breadcrumbs. Set aside on a plate.
- Heat a large frying pan over medium-high heat with enough olive oil to coat the base.
- Cook popcorn chicken in batches, tossing occasionally, until golden and cooked through, 5-6 minutes. Transfer to a paper towel-lined plate.
TIP: Add extra oil if needed so the popcorn chicken doesn't stick to the pan!
- While chicken is cooking, add broccoli and a splash of water to a microwave-safe bowl, then cover with a damp paper towel.
- Microwave broccoli on high until just tender, 2-4 minutes.
- Drain broccoli, then return to the bowl and cover to keep warm.
- In a medium bowl, combine shredded cabbage mix, apple, garlic aioli and a drizzle of white wine vinegar. Season.
- In a second medium bowl, combine gravy granules and the boiling water (1/2 cup for 2 people / 1 cup for 4 people), whisking, until smooth, 1 minute.
- Divide popcorn chicken, bacon mash, creamy slaw and broccoli between plates.
- Serve with gravy. Enjoy!
