Cooking Steps

Cook the chickpeas & broccoli

  • Set your air fryer to 200°C. Drain and rinse chickpeas.
  • Chop broccoli (including stalk!) into small florets.
  • In a medium bowl, combine chickpeas, broccoli and a good drizzle of olive oil. Season.
  • Place chickpeas and broccoli into air fryer basket and cook for 12-15 minutes until golden, shaking the basket halfway.
  • Transfer to a large bowl and set aside to cool slightly.

TIP: No air fryer? Preheat oven to 220°C/200°C fan-forced. Place prepped chickpeas and broccoli on a lined oven tray in an even layer. Roast until golden, 15-20 minutes.

  • Meanwhile, roughly chop cos lettuce (see ingredients).
  • Slice lemon into wedges.
Cook the salmon

•  When the broccoli and chickpeas have 5 minutes remaining, heat a large frying pan over medium-high heat with a drizzle of olive oil.
• Pat salmon dry with paper towel and season both sides.
• When oil is hot, cook salmon and lemon pepper seasoning, skin-side down first, until just cooked through, 2-4 minutes each side.


TIP: Patting the skin dry helps it crisp up in the pan!

TIP: The spice blend will char slightly in the pan, this adds to the flavour!

Finish & serve

•  To the bowl with broccoli and chickpeas, add cos lettuce, grated Parmesan cheese, a good squeeze of lemon juice and a drizzle of olive oil. Toss to combine, then season to taste.
•  Divide chickpea salad between bowls. Top with zesty salmon. Drizzle over Caesar dressing and serve with any remaining lemon wedges. Enjoy!
