Cooking Steps

Cook the halloumi
1

• Cut halloumi into 1cm-thick slices.
•In a large frying pan, heat a drizzle of olive oil over high heat. When oil is hot, cook halloumi until golden brown, 1-2 minutes each side.

Roast the pumpkin

• Meanwhile, place diced kumara on a lined oven tray. Drizzle with olive oil, season with salt and pepper and toss to coat. • Roast until tender, 20-25 minutes.

Make the slaw

• Meanwhile, thinly slice spring onion and pear. • In a medium bowl, combine spring onion, pear, rocket, dill & parsley mayonnaise and a drizzle of vinegar. Season to taste.

Finish & serve

• Divide BBQ-spiced halloumi, roast kumara and pear slaw between plates. • Dollop beetroot relish over halloumi to serve. Enjoy!
